You can see all that on the battlog stats. When battlelog loads up, click stats (at the top, underneath your name, it's a little symbol like on a hospital heart monitor) and then along the top again click weapons and there you can see every weapon. Don't worry too much about unlocks though, seriously. In my opinion the basic guns that you start with for each class are by far the best, and the best scope is the PKA-S (holo) which is usually unlocked after getting only 10 kills with whatever weapon you're using.
