Architectural programmes such as Revit, 3DS Max running some rendering software such as V-Ray. Interested in creating architectural VR content all Alongside gaming with the hopes turn up some ultra settings. Will probably have some 4k video editing (GoPro footage etc) and general daily use off my partner.

Priced above at 2.5k
(Including a good warranty)

A better boot drive, the Samsung m2 or WD Black are much faster. For years I have cautioned people for getting excessive RAM so today is an exception, I would check with your software what is recommended but you have some RAM hungry stuff mentioned so 32GB may be worth thinking about. Worth knowing that PCS allow us to work on our machines without voiding the warranty, so you could start at 16GB and add if needed.

For the other stuff you will get better advice from Oussebon.

The MOBO has 2 M.2 ports so perhaps it may benefit from a second better quality M.2 as the default boot drive? As for the one purchased, does it still stand as a superior choice over the Samsung 860 EVO SSD even though it is a ADATA SU800

Not really, if you look at the read/write speeds. The PCLe NVLMe drives are speeds above 3400, rather than the 500 + of the two mentioned.
