I know it would be fine for gaming just making sure if you could tell me at what extent is it i could game at? (Like would it run every game just some on a lower graphics level?)

It's very bad value for gaming - you can do better I think for that kind of money.

What's the budget, what did that spec cost, and what monitor are you gaming on?

And what case did you pick / any other things missing off the spec?

This is the full spec? my budget is around £1,100 for a gaming pc and would like a monitor too, i'm not looking for anything that is going to blow my mind and its for casual gaming but obviously if i can do better with 1.100 then that is something i'd be interested in

AMD's Ryzen CPUs are much cheaper (partly because Intel's prices are inflated due to supply shortages) but offer similar performance, especially for gaming at this level
Any performance difference is made up for partly by faster and more RAM too.
RX 580 gives similar performance to the 1060 but for £70 less
The SU800 is a bit of a waste of the M.2 slot, you might as well get a cheaper Sata SSD
Get a better monitor with freesync. The AOC G2460VQ6 has a very good freesync range which will mean much smoother gameplay
A better case might help improve upgrade options and airflow
