1440p Gaming PC

I have a 1440p 60fps monitor.
I would like to use this PC for playing games like Elden Ring, Baldurs Gate 3, The Witcher 3, Kingdom Come Deliverance at Medium to High settings
I'm looking to spend £1000-1500 for the PC (peripherals not included)

I reckon you can get much better for your money. You're on an old platform with that build, and the storage and power supply you've chosen aren't great.

I'd be inclined to look at something like this, on an updated platform (AM5/Ryzen 7000) and with much more gaming potential both now and in the longer term.
