Building a kiln with data input

Hi,
I know this isn't the best place to ask but I am having difficulty getting answers.
I am building a kiln to treat timber that i work with and need to record the temps of 13 different probes simultaneously.
My question is can this be done with 13 USB probes or do I need a data acquisition unit?
Any help with this would be greatly appreciated.
Also if anyone could point me to where I could find more info on how data acquisition works that would be great.
Thanks In Advance

Strange place & question for your first post.

Would a website dedicated to kilns or wood treatments not be a better place to ask about this sort of thing?

I mean, this isn't the first place I would think to ask about the best electronic firing solution for a firework display.

Well there is not a website dedicated to the building of kilns with a guide as to install the data acquisition aspect.

My thought was perhaps someone here may have some knowledge of how computers interact with sensors or data acquisition units or even data loggers.

If not perhaps someone here may know of another forum that may be more related to my question.

Any help is appreciated.

Thanks
