hey dude, thats a tough one!

I have a 3gb gtx 580 and its amazing, not had any problems at all! But two 6970's would fantastic! I don't know if they beat a single 580 though, but I believe they beat a 6990.

But a few things to be aware of with have two gpu's......make sure ya case has great cooling, so they don't over heat, keep an eye on the temps when gaming etc.

Tough choice. Are you planning on using multi-monitors? if so go for the two 6970's.

if you want to litrually max everything or pretty much max then the 2 6970s if not an your fine with near max settings then go for the 580 as the 580 alone is plenty for pretty much anything.

Wouldn't not be smarter to go for single gtx 580. Less drain on you electricity, less problems with heat in your case, less problems in compatibility in games and plenty of room to improvement (aka going sli gtx 580) in a near future once single card will just not be enough. I would go single card.. but as many opinions as people on the forums ^^
