So,

I'm aware an i7 is overkill for gaming but as I'd be using it for video editing too I though I'd stick it in there (along with 16gb RAM. There is some futureproofing here too. But, if you think it's unnecessary then do tell.

I've no monitor specced but it'll be a 1920 x 1080 23" IPS summat or other.

I'm not sure on cooling. Any advice would be greatly appreciated.

Nice - similar to mine. You could probably do away with the water cooling, air cooled will do just as well (but admittedly water cooling looks 'cleaner' imo). You can also drop the 'K' version of the processor unless you are planning to overclock in the future.
