Mini PC spec advice please

I am looking to buy a mini pc to replace my elderly mothers old desktop which is very old and creaky.
She does not game and mostly uses it for web browsing, word processing and viewing photos/videos.

I am not experienced regarding these mini PCs but was thinking one of these would be ideal and save her the bulky desktop she currently has.
I have selected the AMD 4500u and 512GB M2 drive instead of a SATA for speed.

Would anyone have any advice on this type of mini pc, its suitability/reliability or my current selected spec and any suggested changes to make to it?
Would the 4700u be worth the extra money for the extra cores, which also has the RX Vega 7 graphics included instead of the Vega 6 in my current config?

Honestly, for the purposes you're talking about this will probably be completely fine. You're not expecting it to do gaming or video editing, which is good because it won't! For what you're talking about, six cores is plenty, as is the graphics chip on the 4500U.

There would be an argument for getting 16GB of RAM, ideally 2933MHz, but it's not necessary.

The place you could save money would be the Windows licence -- if the old computer is running Windows 10, it's not difficult to install Windows yourself and transfer the licence over. It's obviously added setup work, but it's not difficult per se, and saves you €90ish.

The downside of a mini-PC like this is its extreme lack of upgradability. With a desktop, even a relatively small one, you can upgrade all kinds of things to keep it current. With this PC, you might be able to upgrade RAM and the M.2 drive, but that's it. That's the compromise you make.

Her computer is SO old that I dont think it even has windows 7 on it (yea that old!) so new windows will be required.
She will not have any interest in upgrading anything once she gets it.
Main thing for her is that it works reliably and she doesnt have to do anything once she gets it.

Only thing I may look to upgrade for her is the RAM and M2 drive but for now I think the 8GB RAM is plenty for her purposes, even though I am pretty sure RYZEN does prefer dual channel.
Would there be much point in just going for dual channel to begin with (2x8GB) or is that overkill considering the usage?

The performance benefits of the two sticks of RAM probably won't be seen in the work you're talking about. That would be more for gaming or productivity work.

If there might be photo editing, though, I'd definitely want the extra RAM, and I'd want the speediest on offer, as it also acts as the system's video memory, and some photo editing will use graphics acceleration.
