Hi there! Your use cases aren't quite my forte but I thought I'd have a go. For the vast majority of use cases these days, custom loops are generally not worth it, they add a lot of cost and complexity when a high quality AIO (still technically watercooling) can give you 99% of the performance. With Intel VS AMD, AMD are the front runners right now and Intel is lagging a long way behind. There's a thread in the post @Martinr36 linked about why if you're curious. Because of these reasons, I've gone for an AIO cooled AMD build.

Switching to a non-custom loop gives you a lot more choice with cases, and the 5000D is a fantastic one. The Ryzen 9 5950X is a fantastic top of the line CPU before switching to threadripper (the ones shaped like playing cards). With it's 16 cores it should sail through most work loads. For that powerful of a CPU, you'll want the Crosshair motherboard for it's uprated VRM's. As your main uses are CPU and GPU heavy, I've gone for a 64GB, AMD also loves fast RAM so I've gone for a 3200mhz kit. For your gaming needs, the 3060TI would be the ideal GPU for your monitor but it's currently not orderable with PCS so I've had to step up to the 3070. For storage, do you have any you plan to add from your current PC? I see you only have a 1TB HDD. For my spec, I've gone for a super speedy Gen 4 500GB boot drive, a 2TB SSD for your games and current projects then a 2TB HDD for general files as it's only about £10 more for double the storage. To power the system the RMx 850W is a top of the line unit and will power this nicely. For cooling, the 5950X is a toasty chip, so the top of the line H150i from Corsair is a great choice. For more cooling, I'd suggest calling PCS and requesting to add another 3 Corsair LL fans (I can't do this here as the configurator won't let me). The Corsair AIO comes with high quality thermal paste so the uprated stuff isn't necessary. I've removed the WiFi card as the motherboard come with inbuilt WiFi. I've also removed the anti-virus as it's known to cause issues and the Silver warranty is well woth the £5.

As I've said, this sort of build isn't my forte, but I hope this helps with a general direction and gets the ball rolling for the people more clever than me to come in and give advice 😂
