And also would it be worth getting PCSpecialist to overclock the processor, or will it not make much of an impact on the performance?

What are you planning on using the PC for? Gaming?

Were you planning on overclocking (in general, overclocking isnt really needed for gaming)?

Edit: re. your question about overclocking, the answer to my first question will help us answer that one

I will be using it primarily for gaming and maybe some video editing (nothing fancy, just sony vegas pro 9)

Well, I reckon you don't need to overclock at all :)
And in that case, you could drop down to the non-k varaiant of the CPU, could drop down to the Samsung 1333MHz RAM and could drop the cooling to something lesser.

The two Iiyama monitors do come with DVI cables if you don't wish to use the HDMI cables (DVI and HDMI are virtually the same really)

Thanks a lot for your help Rakk. I think I'm going to keep the "K" variant purely becuase I might overclock it in 2-4 years, may as well be prepared just in case. Thanks again. Trying to find where to get a black NZXT Phantom case now, everywhere seems to be out of stock, its a nightmare!

If you are going to only have 1 graphics card and are not planning to add another one in the future, then the power supply is overkill, you will be fine with 650w, you can go with 750w if you really want to.
And I would change the motherboard to ASUS® P8Z68-V.
