I am a bit of a noob when it comes to PC specs but want to know if the specs below are any good/OTT? My laptop use mainly consists of running a couple of online businesses, photo editing, internet browsing and emails. I won’t be using it for gaming. Thanks in advance.

Photo editing could benefit from an upgraded GPU. But it depends on your workloads and given the rest of the spec you picked I'd be surprised if a 1660 ti was necessarily worth it.

The Fusion Pro's draws are 2-fold. The advertised 100% sRGB screen, and the thinness of the chassis.

However:

1) The 72% NTSC screens on other laptops are apparently about equivalent to 99-100% of the sRGB colour gamut anyway

2) Other chassis are very nearly as thin and as light

3) The Fusion Pro only has 1 slot for the RAM. This can affect performance (as single channel only, not dual channel) and means if you're buying 8gb now, adding 16gb is less cost effective.

You may want to consider alternatives e.g.
the Vyper II (similar thickness and weight - £80 more though does also pack the 1660 ti)
The Recoil III GTX (not as light, but similar thickness, well-regarded cooling, and cheaper - better GPU, slightly slower CPU)
Both with 72% NTSC screens, and dual channel RAM.

For the price tag yes. But as Oussebon pointed put the NTSC matters, and my suggestion is downright pathetic. Do as he suggests👍

Always a good suggestion to look at alternatives that economise, have different features, or offer more bang for buck. If the OP's photo editing needs are quite modest or they will be editing on an external monitor anyway, a 45% NTSC screen isn't necessarily an issue. :)
