On mostr games you would hardly notice, maybe if a game was more CPU intensive you might get a little boost from the upgraded CPU, but really it comes down to the GOU. The GTX 680 is going to serve you well for any game you like, and an i7 or even an i5 is ample for gaming.

Obviously newer is better, but you wont go wrong with a sandybridge CPU

an i5-2500 or i7-2600 will handle all your current gaming needs and will probably continue to do so for the next few years.
