Yep, AMD is beating Intel across the board at the moment.
What is your total budget?
What monitor do you have? Make/model or resolution/refresh rate would be handy to know. We pair the graphics card to match the monitor.

My budget is £2600 I’ve got a 27inch 1440p 144hz monitor.

3080 is overkill for 1440p gaming, the 3070 will be a better fit. You'll be able to hit 120 fps in warzone with high graphics settings, and you can max out your monitor if you crank the settings down a little further for the competitive edge.
32GB of RAM is worth it with the editing.
Buffed up your storage with a super-fast 980 pro for your OS and programs, and a 1tb m.2 SSD to store your games library on.
Sound card isn't necessary, onboard sound quality with the motherboards is really good.

With the above you could even use the leftover change to up it to the 5900X. The STRIX motherboard would be a nice addition of doing that, but not necessary as it would take you over the £2600 mark.

Another thing to consider is the level of video editing. If it's fairly in-depth and professional then a cache drive would be a nice addition.

The 3080 is good for 4K gaming isn’t it? I plan on getting a 4K monitor later in the year so thought I’d buy the 3080. Thanks for your help I’ll adjust my build accordingly 👌🏼👌🏼

It certainly is but there's quite the price jump to get it. May be more beneficial to get something appropriate for now, pocket the savings and then see what's available next year.

Much more often than not spending money now to support a future purchase is a very poor choice that offers diminishing returns. The 3070 is the equivalent of a 2080Ti from last year, who knows what next year will bring, and the value that will come with it.

It's also, you'd need to spend a further £1000 on a monitor to make any use of a 3080.

If just looking at standard 4k 60Hz screen, then again, a 3070 would be more suitable.
