Upgrade help please

Hi all,

I am looking to buy a new pc to upgrade from my current setup. Realistically I use it for gaming, internet and some office work so probably 12600k or equivalent (i know very little about AMD) as I have read that the performance on the 12 series is such a step-on that it isn't worth taking any previous generation now. Probably aim to spend c. £1k excluding GPU but have some flexibility. don't really want to be going upto/beyond £1.5k. I am not fussed about RGB as the tower sits on the floor under the desk due to space constraints.

I have a habit of running 2 screens with 20+ chrome tabs (!!) open on 2nd while gaming. Had to stop this recently because CPU running at max.

Current PC:

CPU - i7-4790k
Motherboard - Maximus VII Ranger
GPU - 2080S (upgraded in 2020 from GTX970 which I still own)
RAM - Corsair Vengeance Pro DDR3 1600 C9 2x8GB
Drive: several SSDs and an HDD backup.
Case: Fractal standard mid tower from 2013
PSU: Corsair 550w gold modular

Main monitor: Samsung LC32JG52QQUXEN 32-Inch 1440p 144Hz (guess the pixels not the size matters?)
2nd monitor: AOC G2460p 1080p 24 inch 144Hz

My thoughts were:

1, to upgrade the key pieces (MB/Ram/CPU/PSU) but I guess i dont know what to do with the old bits afterward
2, to buy new everything except GPU and then put this 2080S into the new one. I could then put the GTX970 back into this old one and keep/sell ?
