It all depends on the components it's paired with, particularly CPU.
But it's not really possible to comment on individual components, it's all down to the system as a whole
Mainly with mobo's, it's the VRM capabilities that regulate voltage passthrough to the CPU, this can lead to better stability although on Z790 it's a generally mute point as the processor will thermal throttle no matter what you do (unless using cryogenics). Aside from that it's IO connectivity support like number of USB's or number of NVME slots. Sometime higher end boards will have far faster LAN ports as well.
But moreso the high end boards are more designed for extreme overclocking.
