Ok - problem solved!
I had disconnected the (main) battery pack, but hadn't disconnected the CMOS battery.
After hard shutdown and disconnecting the CMOS battery for 5 mins, the notebook now posts the full 32GB and wmic now correctly returns the expected value:
PartNumber=CM4X32GE2666C18S2...
All bought through PC Specialist - I trust them :)
Here's the wmic output, wth the 32GB chip inserted.
The PartNumber is exactly the same as the label on the existing / old 16GB Module (WMIC says CM4X16GE2666C18S4 whereas label says CM4X32GE2666C18S2)
So I'm guessing it then has to be:

I've got a recent Fusion IV ( i7-10510U) originally with a 16GB SODIMM, however, since I'm recently doing a lot of VM / Docker work, I've needed to upgrade the RAM.
(The PC Specialist online upgrade advisor confirmed that a 32GB SODIMM this was a supported configuration - the Fusion IV only...
