I can definitely recommend putting an SSD in it.

Transitioning from an HDD to an SSD, it will feel like everything happens instantly, your PC will boot in a fraction of the time, load times on anything will become a thing of the past

Look at some of the Samsungs under the "M.2 SSD Drive" drop down, those things are phenomenally fast for their cost

The £100 premium of the GTX 1080 FTW is pretty much a waste of cash vs the GTX 1080. The GTX 1080 is arguably a waste if you're gaming at 1080p.
32gb RAM is a waste for gaming, 16gb is plenty more than enough.

What's your target budget? This will help keep suggestions on improvements realistic.

And what resolution / refresh rate is your monitor?

Thanks will look into it. Is there any sort of difference from HDD that will affect negatively?

The monitor I currently have is this one: ASUS VE228TR 21.5" LED DISPLAY, D-Sub, DVI-D. I was thinking of replacing it though but was looking to save some £ somewhere.

So you're are saying the GTX 1080 FTW is pretty much the same as, say, the NVIDIA 1080 GTX you just pay quite a bit more for a little bit more?

There will be some video editting on this PC as well. Multiple video files of 3GB+ size being editted - hence the 32GB RAM.

I am trying to keep the budget under £2000.

Pretty much:

Compare the FTW to the FE. That's what you get for £100 more.

I'm not sure RAM frequency will help much in video editing. What little I've seen suggested that it preferred lower latency. I'd often suggest the faster RAM for gaming (since there are some games that do see real returns on that) but only when buying 16gb - it gets pretty darn expensive when you're buying 32gbs of it (the difference between the Fury X 2133MHz and the 3200MHz is over £100).

Unless you have a need of specific features on the Aorus I'd stick with the Z270E motherboard, which has a pretty rich feature set

I would recommend the 7700k as it's only £20-30 more and can perform a smidge better for video rendering and gaming.

The 1080 is a waste for a 1080p 60hz monitor such as the one you have. A GTX 1070 would be over £200 cheaper and easily enough for even 1440p gaming. The saving alone would let you buy a 1440p monitor.
Though you may want the GTX 1080 for the extra horsepower when video editing, if it's only a bit of a hobby that you do and gaming is the main purpose, I would suggest dropping down to the 1070.

I wouldn't really suggest buying 2 250gb SSDs, just buy a single faster PM961 or SM961 (the PM actually being cheaper despite being faster).

I'd also suggest a more upmarket case to hold all that together, a better quality, modular PSU to feed it, and you may as well get a better CPU cooler if you're going to be rendering things on it.

Here's a version with a 1080, but do consider dropping down to a 1070.

What monitor would you suggest if I did go for the 1080?

I would be recording gameplay with dxtory from the main SDD and writing the recording to another drive, if that was a HDD would there be any difference in quality do you think, compared to another SSD drive?

Just use the same drive. I do that with Shadowplay on an 840 Evo and it's more than fine.

I wouldn't use an HDD - though it should be fine personally I've had some issues with high quality gameplay footage being saved.

For a GTX 1080, a 1440p high refresh rate monitor, ideally with gsync, of the kind that is around £500+. Or 4k if you don't mind dialling the settings down a touch. It's a very high end GPU indeed.
