Ideally I would have liked to have spent a little less, so if there’s any where I could save money and not sacrifice too much performance, I’d love to hear suggestions!

I’ll be purchasing a G7 monitor to pair with this. Not sure if the 3080 is needed or if I could get away with a 3070?

Very solid build here!
The GPU choice depends on which G7 you’re getting. The original G7 is 1440p 240hz, for which I would recommend the 3070, and would tend to recommend against. Over 99% can’t see 240 fps and there are better options for 1440p for the sort of money you would be paying for the G7. However, if you’re opting for the 4K G7 or G7 Neo the 3080 will be a strong pick here for sure.
