It's a fair bit away from your budget but it WILL play 1080p for the foreseeable future and you will also have the ability to play VR at a decent level should you wish to.
You could drop it under £1000 by going for 8GB of RAM instead of 16GB but I would suggest that's a false economy.
When you can afford it, prices are coming down, you could add a decent SSD to get everything flying.

As much of a fan as I am of overclocked builds (feels like every other post I've made in the last few days has been recommending one) I'm not sure it's necessarily worth saving up for one. It's possible to achieve similar results closer to £800.

Just about possible for very high/ultra settings. There are some games that have beyond-ultra settings (render scale, SSAA, etc) that will bring most PCs to their knees, while some games will just inherently go below 60fps on the higher settings in some situations and no amount of money will fix that. So any PC that you buy, if you whack all the settings on all games up to the very highest they will go, you might find it unplayable. An i5 and a GTX 1060 6gb should handle most games on ultra though.

I would always recommend waiting and getting what you want, rather than what you can afford right now. It's hard though and I totally get where you are coming from wanting to get it ASAP.
What you have linked is what I would probably go for. The only things I would change would be the addition of an M2 SSD and an increase of the PSU to the 650 semi modular variety.
Oh, always select the silver warranty. It's £5 more and much better for returns.
