I've attempted to build a PC with room for future upgrades, hence why the cooler and PSU may seem to be a bit of an overkill.
Any suggested modifications for better better performance?

The i7 7800x is a bad choice anyway, as the newer i7 8700k outperforms it and will probably be cheaper overall.

The 8700k is in the Z370 configurators (it uses the Z370 motherboards, not the X299 ones).

And as above, new GPUs are expected to be announced in 4 days time...

Plus even faster CPUs with more cores in the consumer range are expected to launch in October. But at the very least, wait for the new GPUs.
