Gaming PC build to replace my 5 y/o Rig

I've had my current gaming PC for 5 years now and it's starting to get pretty nackered. The final straw came today when not only did the whole thing overheat, one of my graphics cards fried and the heatsink fan stopped. So, rather than try to patch it up I've decided it's time for a fresh start but it's been a long time since looking through components and things so I really need some help on a few things.

I have a max budget of £1500 and I'm looking for a gaming build that'll let me keep my 3 monitor setup. Here's the build I was thinking of:

Case
ZALMAN Z11 PLUS BLACK MID TOWER CASE
Processor (CPU)
Intel® Core™i7 Quad Core Processor i7-3820 (3.6GHz) 10MB Cache
Motherboard
ASUS® P9X79 PRO: INTEL® SOCKET LG2011
Memory (RAM)
8GB KINGSTON HYPER-X GENESIS DUAL-DDR3 1600MHz, X.M.P (2 x 4GB KIT)
Graphics Card
2GB NVIDIA GEFORCE GTX 770 - 2 DVI, HDMI, DP - 3D Vision Ready
Memory - 1st Hard Disk
120GB KINGSTON HYPERX 3K SSD, SATA 6 Gb/s (upto 555MB/sR | 510MB/sW)
2nd Hard Disk
1TB 3.5" SATA-III 6GB/s HDD 7200RPM 32MB CACHE

Questions:
* In my current build I have a Nvidia GTX 480 alongside a GTX 295 (which is the one thats packed in.) A weird combo but I initially had the 295 and then added the 480 a few years back. The 480 powered my main gaming display while the 295 had the other 2 screens connected for less intense stuff. I'm not sure whether to go for the GTX 770 and try to move my 480 across for a similar setup (which admittedly gave me lots of grief to get working last time) or simply go for two GTX 760s with the option of Sli - is it now possible to have output from both cards to different screens while using Sli?
* I really have no idea which motherboard to go for, presumably once I solve the graphics card issue it'll make it easier?
* I presume it's still a good idea to have a SSD drive for the OS and a slower one for everything else?

Thanks in advanced for any and all help :)

For gaming in 3 monitors I'd suggest a SLI set up, the i7-4770 will outperform the i7-3820 in more cpu intensive taks. if it is mainly for gaming an i5 will be a cheaper choice.

Thanks for the quick reply, that's a much better build. Do you think the 2 GTX 770s in Sli are really worth the additional cost over two 760s?

Ok that's decided then, thanks. Just to clarify: With those two cards will I have to disable Sli mode in order to do different things on each monitor rather than surround gaming and if so, how easy is that to do? Also, will all 3 screens have to be connected to the same card or can I use the outputs from both. I tried googling but seem to get conflicting info.

No need to disable SLI, from the NVidia website the recommended set up is 2 monitors in the top gpu and 1 at the bottom.

That sounds perfect then. Do you have a link to that recommendation on Nvidia's site? I tried using their Sli config tool but the 700 series isn't listed.

Ok thats grand then. One final question before I put in the order - is it worth getting one of the creative sound cards if I only ever use a headset or will the difference not be noticeable form the onboard one?
