New Barebone'ish PC - what motherboard, power supply etc?

Hi guys,
It's time I update my PC as I've had my current one for a number of years.
It works really well but from my quick google skills my I can no longer upgrade my RAM to the latest DDRwhatever.
It's starting to show it's age on a few applications.

Can I have some advice please for a new build please?

I do like to play games every now and then but I'm getting older so I don't have the same amount of time. I'm mainly using it for 3d designing, rendering and slicing 3d prints for my business.
That said It would be nice to be able to play AA games comfortably in the future.

My current build:
Motherboard: Gigabyte GA-Z68XP-UD3P
CPU: i7 2600k 3.4GHz
Graphics: Nvidia 1060 6GB
RAM: 16GB
Power: Corsair AX1200i

I know you can't future proof in tech but the build above has lasted me many years and the only thing I have really upgraded was the graphics card for entry VR.
I'm looking on the build your own pc and looking at all the options and I have no idea what motherboard to select. There's so many options which I don't know what they mean as well as power supply required.
I notice a lot of the boards say something about wifi, I use an ethernet cable but I guess it's nice to have the option?

CPU, i9 sounds pretty but I have no idea if I need that or not.
Ideally I want to bring my graphics card over to the new PC and keep my current PC as a spare.
Budget is £1500 MAX but ideally less then that.
No idea what cooling to use or what not.
Hope I can have some advice.
