New member, and new to customizing a laptop

Hi all,

I'm new here and hopefully this is the right place to come for some advice.

I'm thinking about ordering a Windows laptop from PC Specialist later this year, after viewing new laptops on other sites like PC World and being unhappy with products on offer there.

I'm not a complete newbie to computer tech, but I am far from an expert. How familiar with computer tech do I need to be before ordering custom laptop here?

I don't want to spend a lot of money only for it not to work properly or carry out the tasks I want.

Primarily, I am looking for something powerful, and with a large hard drive.

I haven't been able to find any laptops online with a hard drive above 1 TB. Which seems like a regression because my current laptop that I bought in 2018 has 2 TB hard drive. And I don't want to go back to using something with a significantly smaller storage capacity. It looks like many laptops now are going for smaller, SSD drives, rather than larger standard hard drives.

I know the basic difference between standard hard drives and SSDs. Ideally I am wanting a large SSD hard drive (2 TB+).

RAM is important to me too. I want a powerful machine. I don't use my laptop for a lot of gaming so the graphics card isn't as important to me.

The main thing I have confusion with is the difference between the main storage drive, and the 1st and 2nd M.2 SSD drives.
Ideally I'd like a 2TB SSD hard drive, but I'm not sure which configuration is best for that, or how important the brands, ie PCIe, PCS, Seagate and Samsung, are to consider.
And is it safer & more durable to have one large (ie 2 TB) hard drive, or have 2 drives, with 1 TB each?

I'd also like to know if it's a better idea for me to go with a gaming/editing base, even though I'm not much of a gamer?
I am looking for something powerful and durable. Portability and aesthetics are less important to me. And price-wise I am looking for something around £900-1,250.

Any advice would be really helpful and appreciated.

The most confusion I'm having is with this (see attachment).
As I mentioned above, I'm just looking for a hard drive option of 2-3 TB SSD.
The three options here I'm finding a little confusing, and which drive I should have my OS put on.
