Partitioning

I could do with some partitioning advice. I'm mainly an Office / photos / documents /music / video / surfing type.
I'm proposing to purchase 3 drives:
1. 512GB SSD for system and office apps etc
2. 1TB SSD for fast access storage etc
3. 2TB HDD for slower storage, 1st level archiving etc.
Any advice or recommendations as to how they should be partitioned for optimum use?

On an SSD, partioning is no different to having a folder. The data is spread out over the whole drive by the controller. You want this to happen: it enables wear levelling, which increases the life of the drive.

Windows will create some partitions on the boot drive for recovery purposes. They're tiny and you can ignore them. Otherwise, I'd not add any partitions to your drives. Your setup sounds perfect to me.
