The video was excellent, but to be honest, it somewhat glossed over the real secret: a probe thermometer. I struggled with cooking steaks for years, whether it was regular cooking, reverse searing, BBQ, or any method. They were consistently either overdone or underdone. Finally, I invested in a good probe thermometer, and now my steaks come out perfectly cooked every single time.
