Hi Would like some advice on the 2 Rigs below, which would be the best for video editing, Photoshop, internet and Audio, games not played.

Any advice appreciated

You may want to go for faster RAM. The step to the 2666MHz for the skylake build is actually quite small in price, and going to 3000MHz (the only speed other than 2133 on offer for the Haswell-E as far as I can see) is still not ridiculous.

If you're serious enough about performance to get top end i7s, you may want to consider overclocking. PCS do pre-overclocked systems, and as they push far bigger overclock on the Haswell-E, that might make it the way to go. The above benches were at stock.

If you're doing audio, you may want a sound card. Unless you're already using USB DACs and that short of thing?
