Vortex IV 15.6"

Causes

This will mainly be my working station (I play poker professionally - need to have many softwares open at the same time and experience no lag/crashing). I do some video games aswell and want to play with good(high) settings. I do some traveling every now and then; battery life and weight seems to be ok for that. Also the laptops lifespan is important for me. I'm a bit dumb when it comes to these things, but can I attach 1-2 monitors to this laptop? DVD/Bluray drive probably isn't all that useful nowadays as you can just get everything virtually so it's probably ok to replace it with a HDD(?) and the Intel 2 sound card is fine for a bit more demanding audio play?

How does this setup look like - tyvm in advance ;

You should be able to attach at least 1 monitor, I don't see a problem with attaching 2 but I have never really looked into it. The 780m is a powerful enough card to run your laptop screen + 2 monitors easily so I guess as long as the motherboard supports it then it wont be a problem.

But yes 100% you can do at least 1.

As far as downgrades go... you could knock it back to 8GB RAM, not quite sure how many poker tables you want open but 8GB should be plenty. if your looking to save a bit more then you could go with the 770m over the 780m. the 770m will still game well enough but isn't in the same league as the 780m when it comes to performance. So if gaming is important then the 780m is a good choice.

You could save yourself a great deal of cash by dropping the fast track, or even going for the 5 day service and also the silver warranty will not cover transport from Europe so I would drop that.

But if you can afford to keep everything the same then I would advise you do so as its fairly perfect already.
