If you are not planning to overclock your CPU you could select the i5-3570 instead. You could also go for the 750w PSU to have the choice of adding a 2nd GTX 670 in the future to improve gaming performance.

I've seen this quoted alot about CPU's.

Does this mean that the non-K versions of CPU's are unable to be overclocked or just that they are harder to do or something?

The multiplier on the CPU is locked. You can overclock them apparently but not to the same degree as a K version.
