So I have 2 monitors one is a 32" 1440p 144hz and the 2nd is 27" 4k 60hz. I don't really have a budget but i want to make it as cost effective as possible, but I want to be able to mainly game if im honest.

With no budget it can be very easy to go all out and give you the best of everything, but I've tried to remain conservative and think I've hit a happy medium.
Given you a case with better airflow while still maintaining the lovely RNG visuals.
Upgraded the motherboard to one appropriate to handle the 5800x CPU.
Downgraded RAM to 16GB. That's fine for the majority of games, you only need to think about 32GB when you're looking at MSFS 2020 or heavily modded titles. Also, if you're looking to dip your toes into streaming, photoshop, or professional applications like Blender going back to 32GB is a sound decision.
The 6800XT is a very powerful GPU, and it is best paired with a 1440p superwide or 4k 144hz display. With your monitors in mind the 3070 will be a much more suitable pick.
Rejigged your storage to include a super fast 980 pro for your OS and programs, a PCS m.2 to store your games on, and a HDD for general storage for photos and music that doesn't benefit from being on premium storage.
Dropped the Arctic paste as the H100i Platinum comes with premium paste pre-applied.
Added the wireless card, if you know you're always going to be wired in you can take it out again.
Ditched Bullguard, it's been known to cause issues and Windows Defender does a great job anyway.
Silver Warranty for a fiver is a no-brainer.

Long term will replace both my monitors with a superwide one which is why i was thinking 6800xt. But yeah like it :)

That definitely sounds like a good plan, but if you are going to do that I would recommend upgrading the GPU at that time. The GPU market is rapidly evolving. If for example you waited a couple of years to move to Superwide then the next generation of GPUs will be out and it is likely we will have a card with equal performance to the 6800XT that costs less. However, if you were going to buy a G9 in the next couple of months going for the 6800XT would absolutely be worth it!
We always advise upgrading GPUs with the monitor as it is almost impossible to futureproof a GPU.
