If I make changes to my order while in the Processing stage will that increase the production time?

Also I changed my GTX card from 760 to 770, will that allow me to obtain a free copy of borderlands the pre sequel?

It shouldn't increase production time unless one of the components is out of stock,even then it may not make a difference depending on when they receive more stock.
"FREE BOARDERLANDS: THE PRE-SEQUEL with GTX 770/780/780/TITAN GPUs!" is on offer at the moment so yes you should qualify for it.
