This is where I would go mate, I'd also get my keyboard/mouse/etc elsewhere

This is a good 1440p build. It would crush 1080p if you decided to go that direction but I'd personally recommend 1440p for it

I wouldn't bother with 240Hz but you seem set on it for some reason, I don't understand why. All I can say is don't bother but you seem like you wont listen

So how much fps do you think I would get with that build on 1440p. Also do I need 2 ssd drives?
I have a similar build and messing with settings have had every game run at 144FPS. Most I can simply max out and have it run at 144FPS but a few I've had a lower a few settings to a mix of high/ultra

Reason for two SSD's is to have a dedicated boot drive. This is to ensure the operating system can run at it's optimal speeds at all times, the idea is to keep this drive no more than 50% full and it will keep the OS running really sharp and quick

The second drive is for the rest of your storage. Fill this up to your hearts content

FPS isn't really relevant over 120hz, you're missing what's being said, it doesn't offer any benefit because you won't see it. 1080p at any refresh rate is poor by today's standards.

You WILL notice a substantial improvement from going 1440p though.

Isn’t a 3600mhz ram better than a 3200mhz, also do I need a 850w power supply
Due to the different latency of the ram supplied by PCS, there is little performance difference between 3200 & 3600, the reason for the 850W PSU is to give good headroom for future upgrades, most of the time these days I actually spec the 1000W

And will I have no problems with over heating or loud fans with this set up

What was the reasoning behind changing the processor cooling
The case in your original build would have contributed to poor cooling, and therefore the fans having to ramp up, and then you'd probably have got throttling leading to poor performance
