Below is the spec that I have ordered. I spent a lot of time making sure everything was just right, but I'm no expert in this field. I am hoping to be able to play the most high end games at top settings with this, and a second opinion would be awesome. What does everyone think?

Welcome to the forums.
Looks like you got a pretty decent spec there, although there's a couple of things I would change.
Firstly, if you're only going to be gaming and not doing some high end editing, then you could probably bring the RAM down to 6Gb-8Gb for a little bit of future proofing. But pretty much all current games will only use up to 4Gb of RAM.
Secondly, I'd change your hard drive for a Caviar Black option, the Green's are a bit slower and a smaller cache making them more suited to storage volumes rather than boot volumes.

Any reason why you've gone for two 560's?
I would always suggest one more powerful card than SLIing two lesser ones, you could get a single 580 for a little more (maybe 30 quid or so) than the two 560's

For the i7-900 series 6GB would be better than 8GB, the i7-900 series uses triple channel memory so multiples of 3 work best :)
Most games won't use anywhere near 4GB of RAM themselves :), they just recommend 4GB so you have memory spare for running everything else and have space to spare :)

The thinking behind this was that if I had 4GB combined with the two cards then they might be a bit more future proof than having the one 3GB. Is this not the case?

Your memory does not get doubled with 2 cards as it onky uses the memory off of the 1, also agree with Rakk always go for 1 powerhouse card than 2 lower cards and leave yourself room with a high enough PSU for Sli at a later date.

Also meant to put i would go more with the spec MadMan has put together but if you want to save a little from that you can drop the PSU down to a 650W and also you only need 4 GB Ram for gaming, if you want to leave room for a second GTX 580 then put a Corsair HX1050W in.

If the memory only gets used off the one card then what is the purpose of actually having a second card?
