I was wondering if it's possible to sli a 1GB and 768MB versions of the GTX 460 card?

You can SLI / crossfire any cards of the same GPU model.

So if you have 1 x 460 768mb with standard clocks and 1 x 460 with 1024mb and an overclock then they will negotiate. The 460 with 1024mb will lower its clocks and only 768mb of the vmem will be used.
